Veggie Tofu Scramble

Ingredients
  

  • 1 small yellow onion (chopped)
  • 5 medium mushrooms (sliced)
  • 1/4 cup vegetable broth
  • 12 oz package firm tofu (drained and crumbled)
  • 1 tbsp tamari
  • 1 tbsp dried parsley flakes (or 3 TB. fresh parsley, finely chopped)
  • 1 tbsp nutritional yeast flakes
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp turmeric
  • 1/2 tsp freshly ground black pepper
  • 1 cup fresh spinach (chopped)
  • 1/2 cup prepared salsa

Directions
 

  • In a medium saucepan over medium heat, saute onions and mushrooms in vegetable broth for 5 minutes, or until onions are translucent.
  • Stir in tofu, tamari, parsley, nutritional yeast flakes, garlic powder, onion powder, turmeric, and black pepper, and simmer for 10-12 minutes or until moisture has evaporated. Add spinach and salsa, and scramble for 2-4 minutes or until brown at the edges.
  • Serve hot with warm corn tortillas or a side of brown rice or quinoa, if desired.
