Veggie Tofu Scramble

Ingredients
- 1 small yellow onion (chopped)
- 5 medium mushrooms (sliced)
- 1/4 cup vegetable broth
- 12 oz package firm tofu (drained and crumbled)
- 1 tbsp tamari
- 1 tbsp dried parsley flakes (or 3 TB. fresh parsley, finely chopped)
- 1 tbsp nutritional yeast flakes
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp turmeric
- 1/2 tsp freshly ground black pepper
- 1 cup fresh spinach (chopped)
- 1/2 cup prepared salsa
Directions
- In a medium saucepan over medium heat, saute onions and mushrooms in vegetable broth for 5 minutes, or until onions are translucent.
- Stir in tofu, tamari, parsley, nutritional yeast flakes, garlic powder, onion powder, turmeric, and black pepper, and simmer for 10-12 minutes or until moisture has evaporated. Add spinach and salsa, and scramble for 2-4 minutes or until brown at the edges.
- Serve hot with warm corn tortillas or a side of brown rice or quinoa, if desired.
