Plant-based? Plant curious? After all of the compelling data (such as this, this, this, and this) being shared in the media about the infinite benefits of eating a vegan diet and why we and the world are better without animal products (such as this, this, and this), many people wonder…”well, what do you eat when you are vegan?” A good question, indeed. You may know that being vegan means abstaining from anything with a mom or a face, but, then, what does it include?
What’s on the plate includes any combination of vegetables, fruits, legumes, whole grains, nuts, seeds, herbs, and spices….and the possibilities are infinite…
Here is a very brief list of suggestions for meal options:
Breakfasts–
Green Juice (my favorite combo is cucumber, kale, carrot, ginger, and lemon)
Green smoothie – some of my favorites: Spicy Tropical Green Smoothie, Green Sludge, or Chocolate Chip Mint Smoothie
Banana Blueberry Pancakes with Pure Maple Syrup
Oatmeal with fruit (berries, apples, raisins) and nuts/seeds (walnuts, hemp seeds, almonds)
Muffins – Chocolate Chip Pumpkin, Blueberry Oat
Chocolate Chip Oatmeal Cookies
Rice pudding with raisins made with almond, coconut, or soy milk
Bean, rice, and veggie burrito with guacamole and pico de gallo
Huge shock n’ awe salad with lots of raw veggies, leftovers, cooked veggies, and delicious dressing (this, this, or this)
Pad Thai with Thai Corn Chowder
Autumn Chowder with salad
Vegetarian and avocado sushi rolls with sunumono and miso soup
BBQ Tofu Wings with celery sticks dipped in veg ranch dressing
Hearty Lentil Chili with Whole Grain Corn Muffins
Portobello Mushroom Burgers with Sweet Potato French Fries
Indian coconut curry or tofu stirfry with brown rice or quinoa
Falafel with hummus, pita, and cucumber/tomato salad
Lemon-Infused Mediterranean Lentils

I actually enjoy a much wider variety of foods on a plant-based diet than I did before I made the switch. This past weekend my plant-based friends and I celebrated the departure of a dear friend with a tofu scramble, pancakes with berry sauce and coconut whipped cream, coconut ice cream, tacos with guacamole and salsa, and much more! I usually eat on the healthier side, but I wanted to share an idea of what is possible 😉 It was all incredibly decadent and delicious.
Today: Chef AJ's musli for breakfast. I usually either have that or steamed greens. My take on Fat Free Vegan's "Cumin-Infused Vegetables and Chickpeas over Quinoa" for lunch. I ate it over barley and didn't have cauliflower, so used lots of zucchini. For dinner… not sure yet. Probably a baked potato with beans, corn, and salsa. For lunch and dinner I usually have starch, beans, and veggies in some combo. I find I do best when I keep it simple.
