Tropical Greens Delight from The Complete Idiot’s Guide to Gluten-Free Vegan Cooking
Yield: 2 1/2 cups
Prep Time: 5 minutes
Serving Size: 1 1/2 cups
1 cup frozen mango chunks
1 cup frozen pineapple chunks
1 1/2 unsweetened coconut water
1 cup leafy greens (baby spinach, kale, collard greens, etc.)
1/4 cup lime juice
1/4 tsp. cayenne pepper (optional)
1. In a blender, place mango chunks, pineapple chunks, coconut water, leafy greens, lime juice, and cayenne pepper, and blend for 30-60 seconds or until smooth.
2. Evenly divide mixture between 2 glasses and serve immediately.
Variation: If you prefer a less-spicy version, you can reduce or omit the cayenne pepper. You can also replace the mango with papaya. If you can’t find frozen fruit, use the same amount of fresh fruit and add 1 cup ice cubes.

I had to add more liquid so used seltzer water until the blended ran smoothly, otherwise it would not circulate
Yes, coconut water is delicious in this…you can also use water or almond milk. Linda, I sometimes have to add more liquid too…

Forgot to buy limes, so used lemon juice. It was still fantastic. Loved the kick that the cayenne gave it.
